Stirm Wine Co. - Los Chuchaquis Champelli - Albarino

100% Albarino from the C5 vineyard in Santa Ynez. This is a bottle conditioned sparkling wine made in a similar way to the Italian Col Fondo; we reserve about 10% of the juice at pressing and keep it near freezing to use as the natural sugar for bottle fermentation. Pressed to stainless steel and fermented for 2 months before the juice reserve is added to achieve 16 g/L RS, bottled with a bit of lees. Non-disgorged, no SO2 added.
